The dish pit is the hardest room in the building to build well and the first one an inspector walks to. Bowls, boards and chutes are one welded assembly here, because every bolted joint over a bowl is a place food gets in and nobody gets a brush to.
Built as one assembly
The rim runs at a single height across the bowls and the boards, so the counter line stays flat where it meets the wall and a tray slides instead of catching. Drainboards are pitched toward the bowls, not laid flat, so water finds the drain instead of the floor and the room stops being slippery by the second service.
The scrap chute
A corner dish table lives or dies on the chute. The deck around it is wide enough to actually work on, the chute panel is welded into the deck rather than dropped into a cut hole, and the pitch carries scrap without a person pushing it. It is a detail that costs an hour in the shop and saves a motion on every plate for the life of the kitchen.

Legs, height and the floor you actually have
Adjustable legs bring a run back to level on a floor that is not, which is every floor. Bullet feet lift the base clear so the floor under the piece can be cleaned and stays cleanable a year later, when the health inspection is unannounced.
What we need to quote it
You do not need a finished drawing to get an answer. Any one of these three is enough to start:
A plan set.
A sketch on paper.
A photo of the piece that failed.

Three compartment or four?
The sanitary code sets the wash, rinse and sanitize minimum. What decides the rest is the drainboard length your pot flow needs and the wall you have. We will lay out both against your room before anything is cut.
Can a sink line replace a piece without closing the kitchen?
Often, yes, if the swap is planned around service. Tell us the hours you cannot lose and we will build the sequence around them.
Do you build the pre rinse and faucet holes?
Punched in the shop to the fixture you are using, so nothing gets drilled on site with the piece already installed.
